We are currently seeking a Director of Operations for a multi-unit and multi brand restaurant and events company in Azerbaijan.

What are expected from the candidate:

  • Oversee and guide operations of existing and future restaurants (and dark kitchen, if any) directly managed by Saffron RG. All other restaurants’ performance (franchise and other partner projects) should be periodically reviewed and operational intrusion should be within the limits stipulated by franchising/partnership contracts.
  • Review, improve and expand core F&B operational standards (SOPs) for restaurants, dark-kitchens (directly managed by Saffron RG)
  • Full P&L responsibility and accountability for restaurants directly managed by Saffron RG.
  • Review P&L of franchise or any other partner restaurants (within the limits stipulated by relevant partnership contract).
  • Propose to Saffron RG Head Office well justified acquisition/merger/divestment action to franchise/partner brand portfolio mix, considering local market and international F&B brand and kitchen trends.
  • Review and contribute to core operational, procurement and sales process synergy of all restaurants.
  • Ensure the highest level of customer satisfaction, operational standards as per brand guidelines, quality of product, facilities management and restaurants’ marketing/promotions (along with Saffron RG Sales & Marketing team).
  • Ensure digital engagement with customer, relevant digital improvement of core F&B service and production processes
  • Along with Saffron RG Head Office Sales & Marketing team, work out loyalty benefits strategy for guests and loyalty benefits use principles (including digitalization)
  • Participate in negotiations with food delivery aggregators and contribute to Saffron negotiations strategy
  • Provide guidance and support to restaurant managers and F&B outlet management team
  • Review every restaurant’s operational performance daily, weekly, and quarterly, as well as taking corrective action with urgency whenever and wherever needed to meet financial goals
  • Partner with Saffron RG Leadership Team to ensure all policies, procedures, and service standards are followed
  • Partner with restaurant manager, Saffron RG Sales & Marketing and Finance team to draft and roll out F&B offer campaigns.
  • Partner with Saffron RG Sales & Marketing as well as with Restaurant Managers to navigate and engage potential guests by proactive promotion of dining lifestyle across all Saffron RG restaurants’.
  • Review and improve menu engineering skills of restaurant managers and Ex.Chefs.
  • Partner with Saffron RG Head Office HR Team to find, interview and hire restaurant managers and Executive Chefs (or candidate Sous-Chefs).
  • Work closely with operations team to maintain effective staffing levels through establishing strategic plans for recruitment, training, retention, career development, diversity, and the identification of high potential talent that supports the Saffron RG’s future growth and expansion
  • Execute and deliver consistent and successful new restaurant openings as planned
  • Manage in a fiscally responsible manner, controlling food & beverage costs, recipe control, labor and indirect costs and inventory practices.

What qualifications the candidate need to possess:

  • 10+ years of multi-unit restaurant experience
  • Experience of running international brand units, brand roll out in new market and portfolio management in neighbor markets
  • Capable to plan and deploy omni-channel digital engagement with guests (proactive meal offers, table booking, onsite or take-way meal ordering, feedback collection)
  • F&B franchise brand contract negotiation and strict brand guided restaurant management skills
  • Strong P&L understanding and analysis
  • Excellent organizational skills, dedication, and a strong work ethic
  • Strong analytical and conceptual skills
  • Proficiency with MS office suite and industry specific software (POS, scheduling, inventory)
  • Ability to travel regionally on a regular basis
